Food and Wine

ENOGASTRONOMIA Fotolia_40866446_XSTuscia produces excellent food and wine. The most common and typical fresh water fish are whitefish (coregone), lattarini, eels, pike and perch.
Among the best known local meat products are lamb, the meat of the famous Maremma breed of cattle and the green rabbit “leprino” of Viterbo.
The outstanding local cheeses are caciotta soft cheese, pecorino and ricotta.
Pork products include lonza, a kind of rolled smoked ham, pork brawn ( coppa di testa), cheek bacon (guanciale),boneless pork roast (porchetta), ham.
Traditional fruit and vegetable products of the region are Proceno’s garlic, Valentano’s chick-peas, beans “del Purgatorio” from Gradoli, lentils from Onano, potatoes, chestnuts and hazel-nuts from the Cimini Mountains. The countryside of Tarquinia is renowned for its cultivations of asparagus, artichokes and mushrooms.

Est!! Est!!!

Other specialties of the region are the honey produced in the district of Monte Rufeno and the delicious ice cream of Torre Alfina.

In the summer the towns of Tuscia are enlivened by feasts to enjoy and discover local food products.
